Ingredients:
- 2 cups (250g) all-purpose flour
- ½ tsp (3g) baking soda
- ½ tsp (3g) salt
- 1 cup (225g) unsalted butter, softened to room temperature
- 1 ½ cups (300g) granulated sugar
- 3 large eggs, room temperature
- 2 tbsp (12g) fresh lemon zest
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (220g) grated zucchini, squeezed lightly to remove excess water
- ½ cup (120ml) sour cream or Greek yogurt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (5g) lemon zest
- 1 tbsp (15g) melted butter
Instructions:
- Preheat your oven to 350°F (175°C). Generously grease a 10-12 cup Bundt pan with butter and dust with flour, tapping out the excess.
- Combine granulated sugar and lemon zest in a large bowl. Use fingertips to rub the zest into the sugar until fragrant.
- Cream in the softened butter until the mixture is pale and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla and lemon juice until the batter is smooth.
- Whisk together the flour, baking soda, and salt. Gradually stir these dry ingredients into the butter mixture.
- Fold in the sour cream and finally the grated zucchini using a spatula; do not overmix.
- Spoon the batter into the prepared Bundt pan, smoothing the top, and bake for 55 minutes.
- Prepare the glaze by mixing powdered sugar, lemon juice, lemon zest, and melted butter until smooth.
- Drizzle the glaze over the cooled cake before serving.
