Ingredients:

  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated zucchini or yellow squash
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly or line it with parchment paper.
  2. Grate the zucchini or summer squash using the large holes of a box grater, leaving the skins on.
  3. In a large bowl, whisk together the vegetable oil, granulated sugar, eggs, and vanilla extract until the mixture is smooth and pale.
  4. Stir the grated squash into the wet mixture.
  5. Add all-purpose flour, baking soda, baking powder, salt, and ground cinnamon to the bowl. Fold gently with a spatula until just combined; do not overmix.
  6. Fold in the chopped walnuts (or pecans) and semi-sweet chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
