Ingredients:
- 1 cup vegetable oil
- 2 cups granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups grated zucchini or yellow squash
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tbsp ground cinnamon
- 1/2 cup chopped walnuts or pecans
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly or line it with parchment paper.
- Grate the zucchini or summer squash using the large holes of a box grater, leaving the skins on.
- In a large bowl, whisk together the vegetable oil, granulated sugar, eggs, and vanilla extract until the mixture is smooth and pale.
- Stir the grated squash into the wet mixture.
- Add all-purpose flour, baking soda, baking powder, salt, and ground cinnamon to the bowl. Fold gently with a spatula until just combined; do not overmix.
- Fold in the chopped walnuts (or pecans) and semi-sweet chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
