Ingredients:

  • 1 box of vanilla cake mix (15.25 oz / 432 g)
  • 1 cup (240 ml) water
  • 1/2 cup (120 ml) vegetable oil
  • 3 large eggs
  • 1 cup (150 g) crushed Skittles (plus extra for decoration)
  • 1 cup (230 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar
  • 1/4 cup (60 ml) heavy cream
  • 1 teaspoon vanilla extract
  • Food colorings (red, orange, yellow, green, blue, purple)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour the cake pans.
  3. In a mixing bowl, combine the cake mix, water, vegetable oil, and eggs.
  4. Beat on medium speed until well combined (about 2-3 minutes).
  5. Fold in the crushed Skittles gently.
  6. Divide the batter evenly between the prepared pans.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack.
  9. For the frosting, beat the softened butter until creamy.
  10. Gradually add powdered sugar and heavy cream; beat until light and fluffy.
  11. Divide the frosting into six bowls and color each with a different food coloring.
  12. Once cooled, frost the first layer of cake, then stack the second layer on top.
  13. Decorate the top and sides of the cake with the colored frostings and reserved Skittles.
  14. Slice and serve!
