Ingredients:
- 1 box of vanilla cake mix (15.25 oz / 432 g)
- 1 cup (240 ml) water
- 1/2 cup (120 ml) vegetable oil
- 3 large eggs
- 1 cup (150 g) crushed Skittles (plus extra for decoration)
- 1 cup (230 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- 1/4 cup (60 ml) heavy cream
- 1 teaspoon vanilla extract
- Food colorings (red, orange, yellow, green, blue, purple)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease and flour the cake pans.
- In a mixing bowl, combine the cake mix, water, vegetable oil, and eggs.
- Beat on medium speed until well combined (about 2-3 minutes).
- Fold in the crushed Skittles gently.
- Divide the batter evenly between the prepared pans.
- Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack.
- For the frosting, beat the softened butter until creamy.
- Gradually add powdered sugar and heavy cream; beat until light and fluffy.
- Divide the frosting into six bowls and color each with a different food coloring.
- Once cooled, frost the first layer of cake, then stack the second layer on top.
- Decorate the top and sides of the cake with the colored frostings and reserved Skittles.
- Slice and serve!
