Ingredients:
- 3 Bosc pears, firm but ripe, halved and cored
- 2 tbsp unsalted butter, melted
- 3 tbsp honey
- 1/2 tsp ground cinnamon
- 4 oz blue cheese, crumbled
- 1/2 cup walnuts, toasted and roughly chopped
- 1 tbsp fresh lemon juice
- 1 tsp flaky sea salt
- 4 sprigs fresh thyme leaves
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice pears in half lengthwise and use a melon baller or small spoon to scoop out the center seeds to create a small bowl in each half.
- In a small bowl, whisk together melted butter, honey, and cinnamon. Brush the mixture generously over the cut side and edges of each pear.
- Place pears cut-side up on the baking sheet and roast for 18–22 minutes until edges are deep gold and fruit is tender but not collapsing.
- Remove pears from oven and immediately spoon a portion of crumbled blue cheese into the centers while sizzling.
- Top with toasted walnuts, a drizzle of lemon juice, flaky sea salt, and fresh thyme leaves.
