Ingredients:

  • 3 Bosc pears, firm but ripe, halved and cored
  • 2 tbsp unsalted butter, melted
  • 3 tbsp honey
  • 1/2 tsp ground cinnamon
  • 4 oz blue cheese, crumbled
  • 1/2 cup walnuts, toasted and roughly chopped
  • 1 tbsp fresh lemon juice
  • 1 tsp flaky sea salt
  • 4 sprigs fresh thyme leaves

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice pears in half lengthwise and use a melon baller or small spoon to scoop out the center seeds to create a small bowl in each half.
  3. In a small bowl, whisk together melted butter, honey, and cinnamon. Brush the mixture generously over the cut side and edges of each pear.
  4. Place pears cut-side up on the baking sheet and roast for 18–22 minutes until edges are deep gold and fruit is tender but not collapsing.
  5. Remove pears from oven and immediately spoon a portion of crumbled blue cheese into the centers while sizzling.
  6. Top with toasted walnuts, a drizzle of lemon juice, flaky sea salt, and fresh thyme leaves.
