Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, finely chopped (approx. 150g)
  • 2 cloves garlic, minced (approx. 6g)
  • 1 red bell pepper, finely chopped (approx. 150g)
  • 1 (15-ounce) can black beans, rinsed and drained (425g)
  • 1/2 cup frozen corn kernels (75g)
  • 1/4 cup chopped fresh cilantro (15g)
  • 1/4 cup breadcrumbs (30g)
  • 1 large egg, lightly beaten (approx. 50g)
  • 1 tablespoon chili powder (7g)
  • 1 teaspoon ground cumin (3g)
  • 1/2 teaspoon smoked paprika (1.5g)
  • 1/4 teaspoon cayenne pepper (optional, for heat) (0.5g)
  • 1 tablespoon lime juice (15 ml)
  • Salt and freshly ground black pepper to taste
  • 4 burger buns
  • Toppings of your choice (e.g., avocado, lettuce, tomato, salsa, sour cream, cheese)

Instructions:

  1. Heat olive oil in skillet. Sauté onion and garlic until softened and fragrant. Add bell pepper and cook until slightly tender.
  2. In a mixing bowl, mash half of the black beans with a potato masher or fork. Add the remaining whole black beans, cooked vegetables, corn, cilantro, breadcrumbs, egg, chili powder, cumin, smoked paprika, cayenne pepper (if using), and lime juice. Season with salt and pepper.
  3. Shape the mixture into four equal-sized patties.
  4. Heat a little more olive oil in the skillet. Cook the patties over medium heat until golden brown and heated through, about 5-7 minutes per side.
  5. Place each patty on a burger bun and top with your favourite toppings.
