Ingredients:

  • 3 medium overripe bananas, mashed (340g)
  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup brown sugar, packed (150g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract (5ml)
  • 1 cup all-purpose flour (125g)
  • 1/2 cup unsweetened cocoa powder (45g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 3/4 cup semi-sweet chocolate chips (130g)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mash the bananas in a large bowl until mostly smooth with a few small lumps remaining.
  3. Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is cohesive and the sugar has begun to dissolve.
  4. Sift the flour, cocoa powder, baking soda, and salt directly into the wet mixture.
  5. Using a spatula, gently fold the ingredients together until no streaks of flour remain, then fold in the chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 55–65 minutes, or until the center springs back when pressed lightly.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
