Ingredients:
- 3 medium overripe bananas, mashed (340g)
- 1/2 cup unsalted butter, melted (115g)
- 3/4 cup brown sugar, packed (150g)
- 1 large egg, room temperature
- 1 tsp vanilla extract (5ml)
- 1 cup all-purpose flour (125g)
- 1/2 cup unsweetened cocoa powder (45g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 3/4 cup semi-sweet chocolate chips (130g)
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Mash the bananas in a large bowl until mostly smooth with a few small lumps remaining.
- Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is cohesive and the sugar has begun to dissolve.
- Sift the flour, cocoa powder, baking soda, and salt directly into the wet mixture.
- Using a spatula, gently fold the ingredients together until no streaks of flour remain, then fold in the chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes, or until the center springs back when pressed lightly.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
