Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (60g) cocoa powder, unsweetened
- 1/2 cup (100g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) salt
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) granulated sugar
- 1/2 cup (120g) pumpkin puree
- 1 tsp (5ml) pumpkin pie spice
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60ml) melted semi-sweet chocolate chips
- 1 tbsp (15ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- Whisk melted butter, cocoa powder, sugar, egg, vanilla, and salt until a dense, glossy paste forms; press evenly into the pan.
- Bake the base for 10 minutes, then remove from oven.
- Beat softened cream cheese and sugar on medium-low speed until smooth.
- Mix in pumpkin puree, pumpkin pie spice, and vanilla until the color is uniform.
- Add the egg and mix on the lowest speed just until combined.
- Pour the pumpkin mixture over the pre-baked chocolate base and smooth the top.
- Combine melted chocolate chips and heavy cream, then swirl into the pumpkin layer using a toothpick or skewer.
- Bake until the edges are set but the center has a slight jiggle, then cool and chill for 4 hours before slicing.
