Ingredients:

  • 2 pounds (900g) new potatoes or baby potatoes, washed
  • 4 cloves garlic, peeled and smashed
  • 2 tablespoons (30ml) olive oil or unsalted butter
  • 2 tablespoons (15g) fresh parsley, chopped
  • 1 tablespoon (15g) fresh chives, chopped (optional)
  • 1 teaspoon (5g) sea salt (for water)
  • Freshly cracked black pepper to taste
  • Zest of 1 lemon (optional, for finishing)

Instructions:

  1. Wash the new potatoes and scrub them thoroughly if necessary. If the potatoes are large, cut them in half for even cooking.
  2. In a large pot, fill with enough water to cover the potatoes; season with salt. Bring the water to a boil over high heat. Add the potatoes and smashed garlic cloves.
  3. Reduce the heat to medium and simmer for about 15-20 minutes, or until a fork easily pierces through the potatoes. Drain the potatoes in a colander and remove garlic cloves.
  4. Return the potatoes to the pot and add olive oil or butter. Toss with the chopped parsley, chives (if using), pepper, and lemon zest (if desired).
  5. Transfer to a serving bowl and garnish with additional herbs or lemon zest if desired.
