Ingredients:
- 2 pounds (900g) new potatoes or baby potatoes, washed
- 4 cloves garlic, peeled and smashed
- 2 tablespoons (30ml) olive oil or unsalted butter
- 2 tablespoons (15g) fresh parsley, chopped
- 1 tablespoon (15g) fresh chives, chopped (optional)
- 1 teaspoon (5g) sea salt (for water)
- Freshly cracked black pepper to taste
- Zest of 1 lemon (optional, for finishing)
Instructions:
- Wash the new potatoes and scrub them thoroughly if necessary. If the potatoes are large, cut them in half for even cooking.
- In a large pot, fill with enough water to cover the potatoes; season with salt. Bring the water to a boil over high heat. Add the potatoes and smashed garlic cloves.
- Reduce the heat to medium and simmer for about 15-20 minutes, or until a fork easily pierces through the potatoes. Drain the potatoes in a colander and remove garlic cloves.
- Return the potatoes to the pot and add olive oil or butter. Toss with the chopped parsley, chives (if using), pepper, and lemon zest (if desired).
- Transfer to a serving bowl and garnish with additional herbs or lemon zest if desired.
