Ingredients:
- 1 1/2 cups (192g) all-purpose flour, plus more for dusting the pan
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup (200g) granulated sugar
- 4 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup (113g or 1 stick) unsalted butter
- 1 cup (240ml) whole milk
- Powdered sugar (icing sugar) for dusting (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour the baking pan. Alternatively, line the bottom with parchment paper and grease.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl (or the bowl of a stand mixer), beat together the sugar and eggs until light and fluffy. Mix in the vanilla extract.
- In a small saucepan, melt the butter over medium heat. Add the milk and bring to a simmer, stirring occasionally. Remove from heat just before it boils.
- Gradually add the dry ingredients to the egg mixture, mixing on low speed until just combined. Do not over-mix.
- Slowly pour the hot milk mixture into the batter while mixing on low speed. Mix until just combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely (if desired). Dust with powdered sugar before serving.
