Ingredients:

  • 1 1/2 cups (192g) all-purpose flour, plus more for dusting the pan
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (113g or 1 stick) unsalted butter
  • 1 cup (240ml) whole milk
  • Powdered sugar (icing sugar) for dusting (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour the baking pan. Alternatively, line the bottom with parchment paper and grease.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl (or the bowl of a stand mixer), beat together the sugar and eggs until light and fluffy. Mix in the vanilla extract.
  4. In a small saucepan, melt the butter over medium heat. Add the milk and bring to a simmer, stirring occasionally. Remove from heat just before it boils.
  5. Gradually add the dry ingredients to the egg mixture, mixing on low speed until just combined. Do not over-mix.
  6. Slowly pour the hot milk mixture into the batter while mixing on low speed. Mix until just combined.
  7. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely (if desired). Dust with powdered sugar before serving.
