Ingredients:
- 3 cups (450g) Granny Smith apples, peeled and sliced
- 3 cups (450g) Bosc pears, peeled and sliced
- 1/2 cup (115ml) maple syrup
- 1 tbsp (15ml) lemon juice
- 1 tsp (5g) ground cinnamon
- 1 tbsp (8g) cornstarch
- 2 cups (250g) all-purpose flour
- 2 tbsp (16g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (115g) unsalted butter, cold and cubed
- 3/4 cup (180ml) whole milk
- 1 tbsp (15ml) honey
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced apples and pears with maple syrup, lemon juice, cinnamon, and cornstarch.
- Transfer the mixture into a 9x13 inch baking dish, spreading it evenly.
- Whisk together the flour, baking powder, and salt in a bowl.
- Cut in the cold cubed butter using a pastry cutter or forks until the mixture resembles coarse crumbs with pea-sized lumps of butter.
- Stir in the milk just until a shaggy dough forms. Do not overmix.
- Drop spoonfuls of the dough over the fruit filling, leaving small gaps for steam to escape.
- Lightly brush the top of the dough with honey for a deeper color.
- Bake for 65 minutes until the fruit edges are bubbling and the crust is mahogany-colored and golden-brown.
