Ingredients:

  • 3 cups (450g) Granny Smith apples, peeled and sliced
  • 3 cups (450g) Bosc pears, peeled and sliced
  • 1/2 cup (115ml) maple syrup
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5g) ground cinnamon
  • 1 tbsp (8g) cornstarch
  • 2 cups (250g) all-purpose flour
  • 2 tbsp (16g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 3/4 cup (180ml) whole milk
  • 1 tbsp (15ml) honey

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced apples and pears with maple syrup, lemon juice, cinnamon, and cornstarch.
  3. Transfer the mixture into a 9x13 inch baking dish, spreading it evenly.
  4. Whisk together the flour, baking powder, and salt in a bowl.
  5. Cut in the cold cubed butter using a pastry cutter or forks until the mixture resembles coarse crumbs with pea-sized lumps of butter.
  6. Stir in the milk just until a shaggy dough forms. Do not overmix.
  7. Drop spoonfuls of the dough over the fruit filling, leaving small gaps for steam to escape.
  8. Lightly brush the top of the dough with honey for a deeper color.
  9. Bake for 65 minutes until the fruit edges are bubbling and the crust is mahogany-colored and golden-brown.
