Ingredients:

  • 4 cups (approximately 600g) fresh or frozen fruit (berries, apples, peaches, plums, etc.), peeled, cored, and chopped if necessary
  • 1/4 cup (60ml) water (or fruit juice, for extra flavour!)
  • 1-2 tablespoons (15-30ml) honey or maple syrup (optional, adjust to taste depending on the sweetness of the fruit)
  • 1 tablespoon (15ml) lemon juice (optional, to brighten the flavour and prevent browning)

Instructions:

  1. Wash, peel (if necessary), core, and chop fruit into small pieces.
  2. Combine fruit, water (or juice), sweetener (if using), and lemon juice (if using) in a blender or food processor. Blend until completely smooth. Give it a taste and adjust the sweetness as needed.
  3. Line a baking sheet with parchment paper or a silicone baking mat. This prevents sticking and makes it easier to remove the fruit leather later.
  4. Pour the fruit puree onto the prepared baking sheet. Use an offset spatula or spoon to spread it into a thin, even layer – about 1/8 to 1/4 inch thick. Thicker layers will take longer to dry.
  5. Preheat your oven to the lowest possible temperature (ideally 170°F/75°C or lower). Bake for 3-6 hours, or until the fruit leather is no longer sticky to the touch and has a leathery texture. Leave the oven door slightly ajar to allow moisture to escape. For a dehydrator, follow its instructions for fruit leather.
  6. Let the fruit leather cool completely on the baking sheet. Once cool, peel it away from the parchment paper or silicone mat.
  7. Cut the fruit leather into strips or shapes using scissors or a pizza cutter. Store in an airtight container at room temperature for up to 2 weeks, or in the refrigerator for longer storage.
