Ingredients:

  • 1 package (3 oz / 85g) strawberry or raspberry jello mix
  • 1 cup (240ml) boiling water
  • 1 cup (240ml) cold water
  • 1 package (3.4 oz / 96g) instant vanilla pudding mix
  • 2 cups (480ml) cold whole milk
  • 1/2 cup (115g) whipped topping (Cool Whip)
  • 1 cup (230g) whipped topping (Cool Whip)
  • 6 large strawberries (150g), sliced
  • Fresh mint leaves for garnish

Instructions:

  1. Pour the boiling water into a bowl and whisk in the jello mix until no granules remain.
  2. Stir in the cold water.
  3. Divide the mixture evenly among the 6 individual jello parfait cups.
  4. Refrigerate for at least 2 hours or until the surface is firm to the touch.
  5. Combine the instant vanilla pudding mix and cold milk in a bowl and whisk vigorously for 2 minutes.
  6. Gently fold in 1/2 cup of whipped topping using a spatula to create a fluffy texture.
  7. Carefully spoon the vanilla pudding mixture over the set jello, smoothing the top with the back of a spoon.
  8. Return the cups to the fridge for another 1 hour.
  9. Top each cup with a generous swirl of cool whip.
  10. Garnish each parfait with a strawberry slice and a mint leaf.
  11. Keep chilled until the moment of serving to maintain structural integrity.
