Ingredients:

  • 2 ½ cups (310g) all-purpose flour
  • 1 cup (225g) unsalted butter, cold and cubed
  • 1 tbsp (12g) granulated sugar
  • 1 tsp (6g) fine sea salt
  • 4 to 8 tbsp (60-120ml) ice water

Instructions:

  1. Chill the all-purpose flour in the freezer for 10 minutes and ensure the cubed butter is frozen for at least 15 minutes to prevent melting during processing.
  2. Combine flour, sugar, and salt in a food processor and pulse 3-5 times to mix.
  3. Add the frozen butter cubes. Pulse in short 1-second bursts until the mixture resembles coarse crumbs with a few pea-sized chunks of butter remaining.
  4. Transfer the mixture to a large mixing bowl.
  5. Drizzle in ice water 1 tablespoon at a time, tossing with a fork until the dough just begins to clump together.
  6. Shape the dough into a disk, wrap tightly in plastic wrap, and refrigerate for 1 hour to chill and hydrate.
  7. Roll out the chilled dough on a floured surface to the desired thickness and bake for 30 minutes or until golden brown.
