Ingredients:
- 1 lb (450g) Fresh Figs, stemmed and quartered
- ½ cup (170g) Golden Honey
- 2 tbsp (30ml) Fresh Lemon Juice
- ¼ tsp (1.5g) Sea Salt
- 1 Cinnamon Stick
Instructions:
- Combine the quartered figs, honey, lemon juice, and salt in a heavy-bottomed saucepan. Add the cinnamon stick if using. Stir gently and let the mixture sit for 5 minutes to allow the honey to draw out the fruit juices.
- Place the pan over medium heat and bring the mixture to a gentle simmer. Reduce heat to medium-low and stir occasionally to prevent the honey from scorching. Cook for 20–25 minutes until the figs break down and the liquid reduces into a thick, syrupy glaze.
- Perform the spoon test by dragging a finger across the back of a spoon dipped in the jam; if the trail stays clean, it is done. Remove the cinnamon stick and transfer the jam to a glass jar. Allow it to cool completely at room temperature to reach final thickness.
