Ingredients:

  • 1 medium head of green cabbage, finely shredded (about 6 cups)
  • 1/2 cup shredded carrots (about 1 medium carrot)
  • 1/4 cup finely chopped white onion
  • 1/2 cup mayonnaise
  • 2 tablespoons granulated sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Shred the cabbage, carrots, and onion.
  2. In a separate bowl, whisk together mayonnaise, sugar, vinegar, Dijon mustard, celery seed, salt, and pepper until smooth.
  3. Add the shredded vegetables to the large mixing bowl. Pour the dressing over the vegetables.
  4. Toss well to ensure all the vegetables are evenly coated with the dressing.
  5. For best results, cover and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the cabbage soften slightly.
  6. Give it a final toss before serving.
