Ingredients:
- 1 medium head of green cabbage, finely shredded (about 6 cups)
- 1/2 cup shredded carrots (about 1 medium carrot)
- 1/4 cup finely chopped white onion
- 1/2 cup mayonnaise
- 2 tablespoons granulated sugar
- 2 tablespoons white vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon celery seed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Shred the cabbage, carrots, and onion.
- In a separate bowl, whisk together mayonnaise, sugar, vinegar, Dijon mustard, celery seed, salt, and pepper until smooth.
- Add the shredded vegetables to the large mixing bowl. Pour the dressing over the vegetables.
- Toss well to ensure all the vegetables are evenly coated with the dressing.
- For best results, cover and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps the cabbage soften slightly.
- Give it a final toss before serving.
