Ingredients:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup grated mozzarella cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute, or until fragrant.
  2. In a large mixing bowl, combine the sautéed garlic, squeezed spinach, chopped artichoke hearts, softened cream cheese, sour cream, mayonnaise, Parmesan cheese, mozzarella cheese, salt, pepper, and red pepper flakes (if using). Mix well until fully combined.
  3. Transfer the spinach mixture to the prepared baking dish.
  4. Sprinkle the remaining Parmesan cheese over the top of the dip.
  5. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the dip is heated through and the cheese is melted and golden brown.
