Ingredients:

  • 2 cups (300g) fresh strawberries, hulled and quartered
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) water
  • 1 tablespoon lemon juice

Instructions:

  1. In the saucepan, combine strawberries, sugar, and water.
  2. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar.
  3. Reduce heat to low and continue to simmer, stirring occasionally, for about 15-20 minutes, or until the strawberries have softened and the syrup has thickened slightly.
  4. Remove from heat and stir in the lemon juice. Pour the mixture through a fine-mesh sieve or cheesecloth-lined colander into a bowl to separate the strawberry syrup from the solids. Press the solids gently to extract as much syrup as possible.
  5. Let the syrup cool completely. Then, transfer it to the sterilized jar or bottle. Seal tightly and store in the refrigerator.
