Ingredients:
- 2 cups (300g) fresh peaches, peeled and diced into 1/2 inch pieces
- 1 tbsp (8g) granulated sugar
- 1/2 tsp (1g) ground cinnamon
- 1 tsp (5ml) lemon juice
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 large (50g) egg
- 1 cup (240ml) whole milk
- 1/2 cup (115g) unsalted butter, melted
- 1 tsp (5ml) pure vanilla extract
Instructions:
- In a small bowl, combine diced peaches, lemon juice, 1 tbsp sugar, and cinnamon. Stir gently until coated and set aside.
- In a large mixing bowl, whisk together the flour, 3/4 cup sugar, baking powder, and salt until no large clumps remain.
- Create a well in the center of the dry ingredients and pour in the egg, milk, melted butter, and vanilla extract.
- Using a spatula, stir the mixture until just combined; stop as soon as flour streaks disappear.
- Gently fold in the cinnamon-coated peaches without over-stirring.
- Grease a 9x5 inch loaf pan or line with parchment paper, pour in the batter, and smooth the top.
- Bake in a preheated 350°F (175°C) oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread rest in the pan for 10 minutes before removing.
