Ingredients:

  • 6 large eggs
  • 1/2 cup whole milk (120ml)
  • 1/4 cup heavy cream (60ml)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted (30g)
  • 1 cup cooked ham, diced (150g)
  • 1/2 cup cheddar cheese, shredded (50g)
  • 1/2 cup mushrooms, sliced and sautéed (50g)
  • 1/4 cup green bell pepper, diced (25g)
  • 2 tablespoons fresh chives, chopped (5g)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, whisk together the eggs, milk, cream, salt, and pepper until well combined.
  3. Evenly spread the cooked ham, cheese, mushrooms, and green bell pepper in the prepared baking dish.
  4. Pour the egg mixture over the fillings in the baking dish.
  5. Bake in the preheated oven for 25-30 minutes, or until the omelette is set and lightly golden brown. A knife inserted into the center should come out clean.
  6. Sprinkle with fresh chives and serve immediately.
